Afrika&#8217;dan Latin Amerika&#8217;ya, Uzak Do\u011fu&#8217;dan Avrupa&#8217;ya yapt\u0131\u011f\u0131m\u0131z t\u00fcm ziyaretlerde g\u00f6r\u00fcyorum ki mutfa\u011f\u0131m\u0131z\u0131n \u00fcst\u00fcne bir mutfak ger\u00e7ekten yok. Bollu\u011fun ve bereketin co\u011frafyas\u0131 Anadolu&#8217;yu tan\u0131tman\u0131n en etkili yolu da gastronomi. Ba\u015fka mutfaklarda tek bir ana renk varken bizim gastronomi tarihimiz geni\u015f bir co\u011frafi deneyimin ve renkli bir k\u00fclt\u00fcr mozai\u011finin \u00fcr\u00fcn\u00fcd\u00fcr. Bu \u00e7e\u015fitlilik, ho\u015fg\u00f6r\u00fc k\u00fclt\u00fcr\u00fcm\u00fcz\u00fcn izlerini de ta\u015f\u0131r. Katalanl\u0131 bir yazar\u0131n \u00e7ok g\u00fczel bir s\u00f6z\u00fc var; &#8216;Yemek sanat\u0131, tencereden seyredilen co\u011frafyad\u0131r.&#8217; der. \u0130\u015fte bizler de bu co\u011frafyan\u0131n zenginli\u011fini, ay\u0131r\u0131c\u0131 vas\u0131flar\u0131n\u0131 gastronomi \u00fczerinden tan\u0131tma sorumlulu\u011fu i\u00e7indeyiz.&#8221;<\/p>\n<p>T\u00fcrk k\u00fclt\u00fcr\u00fcnde, yeme\u011fin kar\u0131n doyurman\u0131n \u00e7ok \u00f6tesinde anlamlar\u0131 oldu\u011funu ifade eden Erdo\u011fan, &#8220;Hayat\u0131n k\u0131lcal damarlar\u0131na n\u00fcfuz eden, yaz\u0131l\u0131 olmayan, fakat herkes\u00e7e konu\u015fulan hayli zengin bir dili var. Cenaze evinde helva kavurman\u0131n, hastaya \u00e7orba yapman\u0131n, bayram sofralar\u0131n\u0131 baklava ile \u015fenlendirmenin ifade etti\u011fi nice duygu var. Her bir tarifimiz, i\u00e7inde nice g\u00fczel tat ve aroma yan\u0131nda hikayeler de bar\u0131nd\u0131r\u0131yor. G\u00fc\u00e7l\u00fc toplum yap\u0131m\u0131z\u0131n zemininde b\u00fcy\u00fck sofralar\u0131, payla\u015fmay\u0131 ve dayan\u0131\u015fmay\u0131 bir ya\u015fam bi\u00e7imi olarak \u00f6\u011f\u00fctleyen mutfa\u011f\u0131m\u0131z\u0131 g\u00f6r\u00fcyoruz.&#8221; de\u011ferlendirmesini yapt\u0131.<\/p>\n<h3>&#8220;T\u00fcrk k\u00fclt\u00fcr\u00fcnde yemek bir \u015fifa arac\u0131&#8221;<\/h3>\n<p>Emine Erdo\u011fan, T\u00fcrk k\u00fclt\u00fcr\u00fcnde yeme\u011fin bir \u015fifa arac\u0131 oldu\u011funu da belirterek, s\u00f6zlerini \u015f\u00f6yle s\u00fcrd\u00fcrd\u00fc:<\/p>\n<p>&#8220;Osmanl\u0131 mutfa\u011f\u0131nda bir\u00e7ok re\u00e7etenin hekim tavsiyesi ile olu\u015fturuldu\u011funu biliyoruz. Etin, meyve ve pirin\u00e7 ile bulu\u015fmas\u0131n\u0131n, sa\u011fl\u0131kla ilgili bir nedeni var malum. Bu anlamda T\u00fcrk mutfa\u011f\u0131, insan\u0131n kendi bedenini tan\u0131mas\u0131, cismaniyetinin \u015fifrelerini \u00e7\u00f6zmesi i\u00e7in de bir ya\u015fam rehberi. Dolay\u0131s\u0131yla kitab\u0131m\u0131z\u0131n ba\u015fl\u0131\u011f\u0131 olan &#8216;as\u0131rl\u0131k tarifler&#8217;, bize T\u00fcrk mutfa\u011f\u0131n\u0131n uzun bir tarihe yay\u0131lan bir bilgelik yolculu\u011fu oldu\u011funu da f\u0131s\u0131ld\u0131yor. Fakat ne yaz\u0131k ki yeme\u011fin end\u00fcstrile\u015fmesi, bizi beslenmenin \u00f6z\u00fcnden, ruhundan ve ahlak\u0131ndan da kopard\u0131. Fast food k\u00fclt\u00fcr\u00fc, bug\u00fcn maalesef d\u00fcnyay\u0131 hasta ediyor. Kronik hastal\u0131klar y\u00fcz\u00fcnden her y\u0131l ger\u00e7ekle\u015fen milyonlarca \u00f6l\u00fcm\u00fcn ard\u0131nda yanl\u0131\u015f beslenme k\u00fclt\u00fcr\u00fc oldu\u011funu biliyoruz.&#8221;<\/p>\n<p>Yeni bir uyan\u0131\u015f\u0131n e\u015fi\u011finde olan d\u00fcnyada geleneksel mutfaklara h\u0131zl\u0131 bir d\u00f6n\u00fc\u015f ya\u015fand\u0131\u011f\u0131na i\u015faret eden Erdo\u011fan, &#8220;\u0130nsanlar yeme\u011fin ayn\u0131 zamanda bir ya\u015fam sanat\u0131 oldu\u011funu yeniden hat\u0131rl\u0131yorlar. Bunun yan\u0131nda do\u011fayla uyum i\u00e7inde ya\u015faman\u0131n form\u00fcllerini ar\u0131yorlar. \u00c7evre krizinin etkilerini azaltacak, s\u00fcrd\u00fcr\u00fclebilir hayatlar in\u015fa etmeye \u00e7abal\u0131yorlar. Yeme i\u00e7me al\u0131\u015fkanl\u0131klar\u0131n\u0131 de\u011fi\u015ftiriyor, israf\u0131n olmad\u0131\u011f\u0131 mutfak anlay\u0131\u015f\u0131n\u0131 oturtmaya \u00e7al\u0131\u015f\u0131yorlar. \u00c7\u00fcnk\u00fc k\u00fcresel olarak her g\u00fcn tonlarca yiyecek \u00e7\u00f6pe at\u0131l\u0131yor. Bunun \u00e7evre ve vicdanlar \u00fczerinde a\u011f\u0131r bir y\u00fck\u00fc var. Tabi bu tablo, yeme i\u00e7menin medeniyet de\u011ferlerinden uzak, hazc\u0131l\u0131\u011fa varan vahim bir noktaya ula\u015ft\u0131\u011f\u0131n\u0131 g\u00f6steriyor bize. Oysa bizim mutfa\u011f\u0131m\u0131zda, ezelden beri tek bir lokman\u0131n bile israf edilmesini \u00f6nleyecek nice re\u00e7ete var.
