{"id":75950,"date":"2022-07-21T12:04:35","date_gmt":"2022-07-21T09:04:35","guid":{"rendered":"https:\/\/www.haberegider.com\/blog\/?p=75950"},"modified":"2022-08-01T12:05:56","modified_gmt":"2022-08-01T09:05:56","slug":"izmirin-sembol-boregi-boyoz","status":"publish","type":"post","link":"https:\/\/www.haberegider.com\/blog\/izmirin-sembol-boregi-boyoz\/","title":{"rendered":"\u0130zmir&#8217;in sembol b\u00f6re\u011fi: Boyoz"},"content":{"rendered":"<h4>\u0130zmir&#8217;in geleneksel sokak lezzetlerinden boyoz, 500 y\u0131l\u0131 a\u015fk\u0131n bir s\u00fcredir kahvalt\u0131 sofralar\u0131nda yerini al\u0131yor.<\/h4>\n<p>\u0130spanyolca &#8220;boh\u00e7a&#8221; anlam\u0131na gelen &#8220;bollos&#8221; kelimesinden t\u00fcretilen boyoz, \u0130zmir&#8217;in \u00e7ok k\u00fclt\u00fcrl\u00fc yap\u0131s\u0131n\u0131 temsil ediyor.<\/p>\n<p>Sefarad Yahudilerinin 1492 sonras\u0131nda \u0130spanya&#8217;dan Anadolu&#8217;ya gelirken yanlar\u0131nda getirdikleri boyoz, \u0130zmir&#8217;de ticari bir \u00fcr\u00fcn haline geldi.<\/p>\n<p>\u0130zmir&#8217;de ilk boyozu Tarihi Kemeralt\u0131 \u00c7ar\u015f\u0131s\u0131&#8217;ndaki f\u0131r\u0131n\u0131nda Boyozcu Avram Usta&#8217;n\u0131n yapt\u0131\u011f\u0131, o \u00f6ld\u00fckten sonra da \u0130zmir&#8217;deki f\u0131r\u0131nc\u0131lar\u0131n bu \u00fcr\u00fcn\u00fc &#8220;Avram Usta&#8217;n\u0131n boyozu&#8221; ad\u0131yla satt\u0131klar\u0131 rivayet ediliyor.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.aa.com.tr\/uploads\/userFiles\/de89f914-66b1-4a0b-9347-13c0eafe70cc\/2022%2F08%2FAA-28546809.jpg\" alt=\"\" \/><\/p>\n<p>\u0130zmirlilerin daha \u00e7ok sabah kahvalt\u0131s\u0131nda t\u00fcketti\u011fi boyoz, \u0131spanakl\u0131, peynirli, tahinli ve hatta \u00e7ikolatal\u0131 gibi farkl\u0131 tatlarla da m\u00fc\u015fterilere sunulabiliyor.<\/p>\n<p>Co\u011frafi i\u015faretle tescillenen boyoz, \u00f6zellikle f\u0131r\u0131n buhar\u0131nda ha\u015flanm\u0131\u015f yumurta ve \u00e7ay e\u015fli\u011finde t\u00fcketiliyor.<\/p>\n<p>Son d\u00f6nemde \u00fclke genelinde tan\u0131n\u0131rl\u0131\u011f\u0131 artan boyoz, dondurulmu\u015f olarak yurt i\u00e7i ve yurt d\u0131\u015f\u0131na g\u00f6nderiliyor.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/admin.aa.com.tr\/uploads\/userFiles\/de89f914-66b1-4a0b-9347-13c0eafe70cc\/2022%2F08%2FAA-28546802.jpg\" alt=\"\" \/><\/p>\n<h3>Yap\u0131m\u0131 me\u015fakkatli<\/h3>\n<p>Buca il\u00e7esinde, babas\u0131n\u0131n 1980&#8217;li y\u0131llarda kurdu\u011fu boyoz f\u0131r\u0131n\u0131n\u0131 i\u015fleten Okan \u00c7elik (46), boyozun yap\u0131m\u0131n\u0131n san\u0131ld\u0131\u011f\u0131 kadar kolay olmad\u0131\u011f\u0131n\u0131 s\u00f6yledi.<\/p>\n<p>\u00c7elik, \u015fu bilgileri verdi:<\/p>\n<p>&#8220;Hamur yo\u011furulur dinlenir, beze haline getirilir ve tekrar dinlendirilir. Bezelerin aras\u0131na ya\u011f verme i\u015flemi yap\u0131l\u0131r yine dinlenmeye b\u0131rak\u0131l\u0131r. Sonra a\u00e7k\u0131 denilen k\u0131s\u0131m vard\u0131r. \u0130ki beze birle\u015ftirip aras\u0131na ya\u011f s\u00fcreriz ve biz boyozun o haline palet deriz. Bu palet havada sallama y\u00f6ntemiyle a\u00e7\u0131larak uzunlamas\u0131na bir fitil haline getirilir ve o fitilden teker teker koparma \u015feklinde ve her fitilden 10 tane \u00e7\u0131kacak \u015fekilde boyoz \u00fcretilir.&#8221;<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/admin.aa.com.tr\/uploads\/userFiles\/de89f914-66b1-4a0b-9347-13c0eafe70cc\/2022%2F08%2FAA-28546818.jpg\" alt=\"\" \/><img decoding=\"async\" src=\"https:\/\/admin.aa.com.tr\/uploads\/userFiles\/de89f914-66b1-4a0b-9347-13c0eafe70cc\/2022%2F08%2FAA-28546819.jpg\" alt=\"\" \/><\/p>\n<p>Boyozun hi\u00e7bir katk\u0131 maddesi i\u00e7ermedi\u011fini, \u00fczerine herhangi bir malzeme s\u00fcr\u00fclmedi\u011fini, sadece f\u0131r\u0131n\u0131n \u0131s\u0131s\u0131yla k\u0131zararak renk ald\u0131\u011f\u0131n\u0131 belirten \u00c7elik, &#8220;Serpme tarz\u0131 oldu\u011fu i\u00e7in pul pul d\u00f6k\u00fcl\u00fcr \u00e7\u00fcnk\u00fc \u00e7ok ince a\u00e7\u0131l\u0131r.
